3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
3 T butter
3 cups chicken broth
4 cups diced potatoes
1/4 cup flour
8 oz Velvetta cubed
1 1/2 c milk
1 t basil
1 t garlic salt
1/4 cup sour cream
salt & pepper
In a 5 qt. pot saute onion, carrots, celery, and basil about 5 min.
Stir in flour, add broth, potatoes and beef.
cover, reduce heat and simmer until potatoes are tender - about 15 min.
Add cheese, milk, salt & pepper. cook and stir till cheese melts.
Remove from heat and blend in sour cream.
