Amy's Chicken Tortilla Soup

1 large onion
2 cloves garlic
1/2 med green pepper
2 T oil
15 oz tomato puree (I use the chili ready tomatoes)
4 c chicken broth (I substitute 3 cups water and 2 or 3 bouillon cubes)
1 T Jalepenos
1 t worcherstershire sauce
1 t sugar
1/2 t salt
1 t chili pwdr
1/4 t pepper
1/4 c flour
1 lb chicken (cooked and cubed)
1 c milk
1/4 c sour cream
8 oz Velveeta
3-4 tortillas

1. Saute onion, garlic, gr pepper and oil.

2. Add tomato, chicken broth, jalepenos, worchestershire sauce, sugar, chicken, and other seasonings. Bring to a boil.

3. While soup is cooking, but tortillas into small bite size strips and lay on a cookie sheet. Bake for 10 minutes on 350, or until they start to brown and are crispy. Once finished, put them in a bowl and set them aside.

4. Mix flour and milk well and slowly add to soup. Stir frequently to avoid scorching.

5. Slowly add the Velveeta. Continue stirring. Once cheese is melted, add sour cream and serve immediately
with tortilla pieces used as topping for individual servings.

cheesy broccoli bake

1 pkg. frozen chopped broccoli
1/2 cup mayo
1/2 cup cream of mushroom soup
1 egg beaten
1 1/2 cup grated cheese
1 cup crushed crackers

cook broccoli according to package and drain well and cool.
Combine mayo, soup, egg and cheese - stir in broccoli.
pour into buttered casserole dish.
top with crackers.
bake at 325 for 30 min.

Egg Casserole

8 frozen hasbrown patties
3 cups shredded cheese
1 lb cubed ham
7 eggs
1 cup milk
1/2 tsp salt
1/2 tsp ground mustard

layer hasbrowns then ham, then cheese in greased 9 x 13 pan.
mix remaining ingredients and pour over.

bake covered with foil - 45 min at 350.
then uncover and bake another 15 min.

Chicken Fettucine Casserole

INGREDIENTS:

package (9 oz) refrigerated fettuccine
3
tablespoons butter or margarine
3
tablespoons all-purpose flour
1 3/4
cups Progresso® chicken broth
1/2
cup half-and-half
1 1/2
cups cubed cooked chicken
1/2
cup oil-packed sun-dried tomatoes, drained and cut into thin strips
2
slices bacon, crisply cooked and crumbled
3
tablespoons shredded Parmesan cheese
DIRECTIONS:
  • Heat oven to 350ยบ. Spray square baking dish, 8x8x2 inches, with cooking spray. Cook and drain fettuccine as directed on package.
  • While fettuccine is cooking, melt butter in 2-quart saucepan over medium heat. Stir in flour. Gradually stir in broth. Heat to boiling, stirring constantly; remove from heat. Stir in half-and-half. Stir in chicken, tomatoes and bacon.
  • Add fettuccine to chicken mixture; toss gently to mix well. Spoon into baking dish. Sprinkle with cheese. Bake uncovered about 30 minutes or until hot in center.

Cindy's Pumpkin Bars

2 cups sugar
3/4 cup marj.
2 cups flour
1 can pumpkin - or 2 cups
1 tsp vanilla
4 eggs (unbeaten)
2 tsp baking powder
1 tsp soda
1 tsp cinnamon

bake in prepared jelly roll pan 30 min at 325 degrees

Frosting:
3 ou. phil cream cheese
3 cups powdered sugar
8 tbs soft marj.
1 tbs milk.

Jordan's favorite meatballs

2 lbs ground beef
1 1/2 cups cracker crumbs - about 1 sleeve of saltines
1 tbs. mustard
2 onions chopped
3 eggs beaten
1/2 cup catsup
1/4 to 1/2 cup milk
salt and pepper
Mix above together and form into balls. Place in 9x 13 pan - I usually end up with enough that I have to use a 9x9 pan too.
Bake at 350 for 45 min.

1/2 cup catsup
1/2 cup brown sugar
1 1/2 tsp mustard
Spread over meatballs after they bake and then bake for another 5-10 minutes.
I double the BBQ sauce mixture because my family really likes it! :)

monkey bread

Ingredients

  • 3 (12 ounce) packages refrigerated biscuit dough
  • 1 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup margarine
  • 1 cup packed brown sugar
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube/Bundt® pan.
  2. Mix white sugar and cinnamon in a plastic bag. Cut biscuits into quarters. Shake 6 to 8 biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
  3. In a small saucepan, melt the margarine with the brown sugar over medium heat. Boil for 1 minute. Pour over the biscuits.
  4. Bake at 350 degrees F (175 degrees C) for 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Do not cut! The bread just pulls apart.
