Cindy's Pumpkin Bars

2 cups sugar
3/4 cup marj.
2 cups flour
1 can pumpkin - or 2 cups
1 tsp vanilla
4 eggs (unbeaten)
2 tsp baking powder
1 tsp soda
1 tsp cinnamon

bake in prepared jelly roll pan 30 min at 325 degrees

Frosting:
3 ou. phil cream cheese
3 cups powdered sugar
8 tbs soft marj.
1 tbs milk.

Jordan's favorite meatballs

2 lbs ground beef
1 1/2 cups cracker crumbs - about 1 sleeve of saltines
1 tbs. mustard
2 onions chopped
3 eggs beaten
1/2 cup catsup
1/4 to 1/2 cup milk
salt and pepper
Mix above together and form into balls. Place in 9x 13 pan - I usually end up with enough that I have to use a 9x9 pan too.
Bake at 350 for 45 min.

1/2 cup catsup
1/2 cup brown sugar
1 1/2 tsp mustard
Spread over meatballs after they bake and then bake for another 5-10 minutes.
I double the BBQ sauce mixture because my family really likes it! :)

monkey bread

Ingredients

  • 3 (12 ounce) packages refrigerated biscuit dough
  • 1 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup margarine
  • 1 cup packed brown sugar
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube/Bundt® pan.
  2. Mix white sugar and cinnamon in a plastic bag. Cut biscuits into quarters. Shake 6 to 8 biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
  3. In a small saucepan, melt the margarine with the brown sugar over medium heat. Boil for 1 minute. Pour over the biscuits.
  4. Bake at 350 degrees F (175 degrees C) for 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Do not cut! The bread just pulls apart.

goulash

1 lb hamburger with onions and green pepper
1 can stewed tomatoes cut up
1 can tomato soup
3 cups cooked macaroni noodles

simmer all together.

Nick's potatoes

1 bag potatoes o'brien
1/2 stick butter
8 ou. Sour Cream (I use less)
1/4 loaf Velvetta - diced (I use less)
salt & pepper

Crock pot: 2-3 hours, stirring every 30 minutes.

stuffed french bread sandwiches

Stuffed French Bread


1 Loaf French bread

10 oz swiss cheese slices

½ lb shaved ham

½ lb shaved roast beef

1 stick butter, melted

2 tsp poppy seeds

2 tsp minced onion

¾ tsp Lowery’s salt

½ tsp lemon juice

1 tsp dry mustard



Cut open loaf and layer cheese & meats evenly over bread. Close loaf, place on heavy foil and cut into serving sizes.


Mix butter & seasonings, pour over top crust, getting some of the seasoned butter into slits. Wrap foil closed. Bake at 350 for 35-40 minutes. Unwrap & serve as individual sandwiches.

Jamie's dip

1 package of cream cheese--room temp.
3/4 to 1 cup of sour cream
1 small can of Niblets corn (sweet corn) rinsed and drained
3-5 green onions chopped and diced
1 package of Hidden Valley Ranch Dip
Stir together...serve with Fritos Scoops.
